Among the best-known dishes, meat specialties stand out, such as the Nebrodi black pig, cooked according to ancient local recipes. Homemade pasta, "maccheroni," on feast days, is seasoned with tomato sauce and pork or mutton and sprinkled with grated salted ricotta cheese.

Ricotta is but one of the many typical dairy products of Cesarea and together with provole, tuma, canestrato and pecorino represents the highest expression of traditional milk processing.
Beef, sheep and pork are simply barbecued and flavored with garlic, oregano and lemon.
Famous vegetables such as wild asparagus that preserve the flavor of the woods and meadows. Even the bread still made at home with natural yeast and baked in a wood-burning oven by skilled hands has the flavor of tradition.
More imaginative and elaborate are the desserts whose ingredients are almonds, hazelnuts and pistachios. Typical desserts include those of the Easter season.
