The Malga Alta Carnia company was born as a refining, maturing and marketing company of the typical Malga della Carnia cheese that preserves the procedures of its production unchanged even after many centuries.
The product is the result of several factors:
– High altitude pastures (1500-1800 m)
– Clear, crystalline and uncontaminated environment
– Herbs rich in properties that give milk high quality nutrients
– Processed milk without pasteurization processes, which preserves intact the enzymatic properties of raw milk
Malga Alta Carnia sas is one of the few Italian companies that ripen cheese in the mountains, all granted thanks to the appropriate climatic conditions and without the help of any technology that conditions its maturation. For this reason, the cheese follows its maturation process, slowing considerably during the winter due to the increase in cold and resuming regular aging in spring.
